What will Nintendo do if SSBU is pushed back?

No, you got it wrong.

The 3DS version was planned for Summer release, not the Wii U version. The Wii U version was always been planned for holiday season.

But the 3DS version has been delayed to early Fall. (October 3rd)

So that makes me think that the Wii U version will also be delayed like Brawl did.
